Brewing Beyond the Basics: a brewing course in Cape Town

Brewing Beyond the Basics covers every step of the brewing process, starting with an in-depth look at each of the four main ingredients. topics covered include how to alter your water, using filters and monitoring pH;  choosing the right malt for the style, base malts vs speciality and the use of adjuncts in place of malt; yeast – what it does, how to clean and culture your yeast plus some important dos and don’ts when it comes to fermentation; and of course the ABCs (Alphas, Betas and Citras) of hops. On day two it’s time to brew. Follow every step of the process as the Afro-Caribbean Brewing Company take you through a full brew on their 450-litre system, in the upstairs brewbar at Banana Jam Cafe. Each stage will be explored in-depth, with troubleshooting tips and information on different methods of mashing, cooling and sparging.

After a food and beer pairing lunch, we’ll turn our attention to filtering, kegging and bottling, including demos of local and imported equipment. Then we give the lowdown on how to open your own microbrewery, including licence applications, red tape and sourcing equipment. Day two ends with a blind tasting session and a practical look at off-flavours.

Speakers vary depending on availability but in the past have inlcuded JC Steyn (Devil’s Peak), Rory Lancellas (Aegir Project), Shawn Duthie (Dissident), Greg Casey (ACBC), Nick Birkby (Brewers Co-op) and Wolfgang Koedel (CBC).

On day three we’re off on an excursion! We’ll venture out to Cape Brewing Company in Paarl for a session on storing and serving the beer followed by a behind-the-scenes tour of the impressive brewery with CBC’s brewmaster, the inimitable Wolfgang. We’ll then move to the Barley and Biltong for lunch and a few beers to finish off the weekend.

      We’ll be running the next course in late May, then the next after that will be August. If you didn’t want to join the full course, you’d be very welcome to join for lunch or, for a small fee, to join on the Sunday for the brewery tour.
